Country French is a mild sourdough. We kinda sorta 'borrowed' this bread formula (via mini iPad camera) while visiting a baker in Normandy, France. (we had full permission to photograph the bakery and baking procedures, so we will just assume that open notebooks lying on a table were included in that permission.)  Ingredients: organic unbleached flour, water, natural levain wild yeast culture (flour+ water), French grey guerande sea salt.  No yeast.  Has some tang, is not a very 'sour'dough. This is an everyday creamy white bread with a full, tangy flavor and nice crust. Keeps well for many days due to the levain culture.
