Sourdough Class (basic level)

Sourdough does not have to be 'sour'. The term refers to breads made with 'wild yeasts' or 'natural leavens'. This is how bread was made before the advent of commercial yeast. Naturally-raised breads have depths of flavor far superior to basic 'straight dough' breads; this is due to complex interactions of microbes with flour and water. At our bakery we nurture natural levain cultures to produce a variety of flavors, textures and acidity levels in our breads. In this class we will work with Going With The Grain levain cultures to create naturally-leavened breads. Participants will mix, knead, shape and bake breads to take home, along with the knowledge needed to recreate these breads at home.

* class is limited to 6 participants to ensure everyone receives individualized attention *

During this class participants will learn: (via lecture, demonstration and hands-on practice)

scientific and practical principles of 'how sourdough works'

how to maintain a natural levain culture at home

techniques for shaping and scoring breads

steps for successful fermenting, proofing and baking

Participants will leave with:

freshly-baked bread

handouts of recipes techniques, recipes, resources

a jar containing natural levain culture to maintain at home

Know before you sign up:

you will definitely get flour-y all over your clothes and shoes.

age 16 or older, please

wear closed -toe shoes with traction (flour is slippy)

wear short sleeves or sleeves that can be pushed up and stay pushed-up

please no wrist or hand jewelry or nail polish (wedding bands ok)

things to bring--- apron and head covering ie cap or head scarf

pen and paper or notebook

optional camera, calculator, water bottle

 

Cancellation/Refund Policy:

In the case that Going With The Grain cancels the class due to weather or illness, all participants will receive a 100% refund.

We will be happy to send you a full refund if you cancel on or before Nov 10 and we are able to re-fill your booking. Otherwise, we will refund 50%.

Each registrant will receive, via U.S. Mail, a receipt of payment outlining what they need to bring, what they will receive plus terms of cancellation, and a waiver to be signed and brought to the class.
