Introducing our new monthly bread series:
each month we'll create a unique variety made with locally-grown products, and we'll profile the local farms from which we source the ingredients.
The January Local is Roasted Garlic Garfunkel--- a natural levain loaf made with garlic and thyme from Silver Wheel Farm near Harrisville as well as rosemary from Springfield Acres near Leesburg.
This is my friend Patty Wilson, who owns Springfield Acres. Patty is famous for her apple cider, and for growing amazing pawpaws, herbs, berries and brussels sprouts. Patty is pictured here with loaves of Apple Cider Bread I made with her cider. Unfortunately, she sold out of cider before I could bake up a big production batch of the bread. We'll try again next Fall...
